My Favourite Healthy Lunch

I just love waking up to ripe avocados! I purchase them when they are hard so it takes a good few days before they're ripe enough to eat. 
So this afternoon I had my absolute favourite lunch; 

Avocado & Tomato on a slice of wholemeal bread 
with a sprinkle of black ground pepper. Yum. 

Avocado tastes so good to me that I feel like it should be unhealthy but it has so many health benefits!

  • Excellent source of monounsaturated oleic acid which is known to decrease dangerous low-density lipoprotein cholesterol while increasing beneficial high-density lipoprotein cholesterol.
